What is Kefir?

Kefir is a fermented milk drink, cultured from kefir grains. Kefir made from live kefir grains has 35 strains of beneficial bacteria, much higher than your common yogurt! Kefir grains consume the lactose during the culturing process, so people who are lactose intolerant have no trouble drinking it. Kefir boosts our immune systems by keeping healthy bacteria in our digestive tract (and remember 80% of our immune system is in our digestive tract!) The fermenting bacteria produce lactic acid which heals and soothes the gut lining. Kefir is rich in vitamin A, B2, B12, D, K, calcium, magnesium, phosphorus, and tryptophan. It has anti tumor properties, prevents disease, increases digestibility and it controls toxins.

Now, that we know how amazing Kefir really is for our bodies, lets learn how it works!


To make raw milk kefir you will need to first find fresh live kefir grains. Once you have that accomplished it’s pretty simple.

1. Place the kefir grains right into a fresh jar of raw milk, approximately a teaspoon to one quart.

2. Cover with a cloth or towel to keep the flies/dirt out but still let in oxygen.

3. Let sit at room temperature for 24 hours to culture. Do not set in the sunlight.

4. Once it has thickened your kefir is done! Using a plastic or wooden spoon (it’s best not to use metal) scoop the grains out of the top of your kefir. (Your grains will generally lay in the top layer.)  Place the grains directly into another jar of fresh milk and so the process goes on.

After awhile you will notice that your kefir grains have multiplied in volume. Your grains will continually grow. You can either share your extras with others, or put them in a small jar of milk and stick them in the fridge. In the fridge your kefir grains will become dormant. To keep them healthy while in the fridge you will need to put them in fresh milk every other week.

As long as you have healthy kefir grains you can continually use them over again. The secret to keeping them healthy is to continually use them!

Everyone’s kefir can vary in consistency, depending on temperature, amount of grains to the amount of milk, etc.. Have fun perfecting it to your liking!!
